Like any other chic, I like to use old banana's for baking. Tonight I pulled out one of my favorite cookbooks, The Modern Baker.

Check out the authors Blog - Nick Malgieri!

One of the easiest and tastiest recipes from this fab book is the Cocoa Banana Muffins.

The recipe is simple and uses ingredients that most people have on hand. To spice mine up a bit I sprinkle nuts on a few and choco chips on a few (mainly for my husband and kids!).

A quick 30 minutes in the oven and my daughter is off eating three muffins! Apparently I need to make double batches from now on!

So I decided since I need to make a few dishes for Christmas for my inlaws (brunch) and my mothers (dinner) I would try a few new things (I do very year!). Well why not use my new cake pop maker for brunch?

I bought a box of Crumb Cake mix, thinking if I use regular cake mix in the machine any type of mix should work.

I mixed up the batter, filled the little compartments and sprinkled some cinnamon topping on top.

And a few minutes later I had cinnamon balls.

Got a little fancy and drizzled some caramel over them....

Super good and the kids love them...got one dish for brunch!

Cake Pop Maker....it's a go!

I love baking so when I saw the Cake Pop Maker I automatically wanted one. What better time to buy one and try one then the holidays? So, I picked one up (for a mere $15.00) and played with it today.

Simple to use, and not as time consuming as I expected!

I used a box mix (Funfetti) and it made a LOT!

I played a little with melted chocolate, although I did not put the cake pops in the fridge for 30 minutes like the booklet recommends, but I will when I do these for peeps other than my kids!

After googling cake pops for the holidays I cannot wait to try some of the amazing recipes I found. These WILL be a part of our Christmas dinner! LOL

Recipe #1 Cinnamon Rolls

Alright, finally had time to make recipe #1 from the cookbook 200 Cake Mix Recipes! The recipe itself was not difficult, but a little time consuming. Three steps involved.

The ingredients lists is very minimal. Always nice!

Cake mix, water, yeast, flour, cinnamon, brown sugar, butter.

Initially I had to mix the cake mix, yeast, flour, and water and then let it rise.

45 minutes later it was time to roll it out, mix the butter, cinnamon, and brown sugar.

Then came the fun part, spread the cinnamon mixture and roll!

Next step was to slice the roll and let them sit for 25 more minutes.

A little hard to cut!

FInally, last step.....bake....frost....

AND EAT!

My husband loved them, kids loved them. I could have used less roll and more frosting!

200 cake mix recipes....YES I CAN!

This past weekend was spent in Galena, IL for a girls weekend. While there....and while shopping, I came across a fun book for myself. 200 Cake Mix Creations by Stephanie Ashcraft. Now why would this make me so excited? Well when you work full time, have 5 kids who are all in school and extracurricular activities, are back in school yourself, have a house to run, and try to take care of yourself it leaves little time to make fabulous desserts. And I LOVE to make fabulous desserts!

I bought the book and the recipes are fun and simple. Many require minimal ingredients. Since I recently watched Julie and Julia I have decided that I too will make all 200 recipes in this cookbook, um although not one per day, I am thinking 2-3 per week. Of course these are far from complicated like some Julia Child recipes and I am already a phenomenal baker, if I do say so myself! Hahaha , but of course others say so as well!

So I begin my magical journey.....with pictures and a happy family.....first up, Easy Cinnamon Rolls....my twins will be very excited!

Boar Bristles...love it

So after hearing about how great 100% Boar Bristle brushes are I decided I would finally try one. I was worried since I have hair to my mid back that tangles easily. Boar bristles are more gentle on hair than plastic or synthetic brushes. They also redistribute oils throughout hair, maximizing shine.

The verdict? LOVE IT! The brush is gentle, makes my hair smooth and seems to help more with tangles and snags. Definitely great for making a smooth ponytail!

I bought an inexpensive brush, Conair 100% Boar Bristle Grooming Brush.

I would recommend getting one! Although I have a feeling I might slowly start upgrading to a prettier one.....a girls gotta have a fancy brush on her vanity!

Yes, I am also making cupcakes for my nephews first birthday. His uber talented momma has hand made ALL the decorations, including cute little picks for the cupcakes I am baking and frosting. I decided to do a dress rehearsal tonight to see how my colors looked. They came out great....but alas, it is very humid in our house, so needless to say my frosting was pretty runny ::insert sniffles here::

All cupcakes will have a pick...

And yes, the kids are enjoying all my trials and errors!

My Cookie Project

So my sister in law asked me to make cookies for my nephew Logans first birthday. Not just any cookies, frosted sugar cookies that WOW! You know, cookies that are artistically colored and put in cute little clear bags. Well.........I am not that good at decorating cookies (really haven't tried). Cupcakes yes, cookies no! So feeling challenged and determined to make them SPECTACULAR I have been researching, watching vids, buying fancy tools....you get the picture.

Yesterdays batch wasn't too bad. I used store bought icing and made simple circle sugar cookies and piped a rim and an "L" in the middle. Todays batch, not so good. I made home made icing, tasted yummy, but turned out perhaps a little thin. And my "monkey" making skills leave something to be desired.

One looks like a deranged monkey alien, one looks like a bear, one apparently needs a face lift, oh and look, one got shot! I have a feeling I know what I am doing for the next few nights!

Did I mention I need to make at least 110 cookies by this Saturday?

My morning ritual........

I thought I would share my morning ritual...without it I could NOT Get through a day!
Yes, I start with a cup of tea at 5:00 a.m. When I make that I also make 2 cups of coffee to which I add chocolate syrup and a dash of sugar. That goes in the fridge. When I leave for work at 7:00 or 7:20, I take one of the coffees, pour over ice and add a shot of half and half. The other one goes in a travel cup to work and is usually consumed by 10 depending on my morning! Yes, I love me some ICED COFFE! And now we know why I am soooo perky. Fine, it's not the coffee, but it does taste GOOD!

I have always had a love of photography, and our 80,000 plus (at last count) digital photos prove this. Since my darling husband decided to upgrade me and has bought me a very sweet SLR camera I have decided to unleash my wild side (insert joke here since I have ALWAYS unleashed my wild side!). I have chosen to dedicate a blog to my RAW photo's...those untouched by editing software. I view it kinda like a woman with no make up....all natural with beauty as Mother Nature intended.

2 pkt. (0.13 oz. each) CRYSTAL LIGHT On The Go Pink Lemonade Flavor Drink Mix

1 qt. chilled club soda

1 can (12 oz.) chilled peach nectar

1/4 cup freshly squeezed lime juice (about 2 limes)

1/4 cup raspberries

1 lime, sliced into wheels

Directions

MIX first 4 ingredients in a large glass pitcher.
SERVE in glasses over ice.
GARNISH with raspberries and lime wheels.

Ok, so tonight I stopped off at my favorite German Deli, Kuhn's, and while I was there I was uber excited to find Chocoladehagel Puur, CHOCOLATE SPRINKLES! Anyone who knows me knows I LOVE LOVE LOVE sprinkles! Like eat them with a spoon love sprinkles.

Got home, opened my box and YUM! These are rich, flavorful, smooth sprinkles. Definitely worthy of a gourmet cake...and a big spoon. Haha, I am sure my husband and I were quite the picture standing in the kitchen with palms full of Dutch sprinkles!

Paper Silverware Bags? Yes, please

So while in New Smyrna Beach this past week we ate at a cute little restuarant on the beach. They were uber busy (and the food explained why!). When the waitress came to take our drink orders she brought our silverware and to my surprise they were packaged adorably. The silverware pieces were in a paper bag sleeve. How damn cute! And of course with my mind ALWAYS on entertaining and decorating, my first thought was Lauren's party in July! Knowing I had already purchased hot pink silverware I knew I had to have these white paper bags. So I ordered a box. Now granted, I had to order 2000, and we have a little over 100 people at this time coming.....but just like the cute little white paper bags we ordered for the candy table at our wedding, I will find 101 uses for the leftover!

Yes, finally back to my computer, my blog, the internet! My computer was down since last Thursday. Throw in 2 birthday parties, a Baptism, a graduation and dinner, packing for our trip (we are currently driving through Georgia) and a few other things my poor blog has suffered! But I am back and in full force and yes, blogging while on vacation. Thats no biggy since I am also doing school work while on vacation!

Two of a Kind

Anthony and Joseph look so much alike that people will ask if they are identical twins. No, they are not. They are fraternal. But on occasion you would think that they were identical by their personalities and resemblance to each other. Twins can be both alike and different in a vast area including looks, personality, and school.

The first thing people will notice about these six year old twins is that they look almost exactly the same. Same blond hair, blue eyes, build and facial features. This amused them as they became older and realized that they looked alike. Then as time went on they became oblivious to how much they looked alike and began to honestly believe they looked only like themselves and no one else. There are subtle differences that, if you see them often enough, without any effort you will be able to distinguish which child is which. Anthony has a larger head, Joseph’s head is slightly smaller. Anthony has a small freckle on his upper left lip, Joseph does not. These minor things make it easy to tell which boy is which. There is also a mere five pound difference between the two boys yet at the fun old age of six, it definitely makes a difference in clothes and feel when picking them up. When dressed alike the majority of people can’t tell them apart. From the comical faces to the sweetest grins these boys are one in the same. When dressed differently it is easier to distinguish who is who. Although they have the same taste in clothes it seems that they do not have the same taste in hair, one likes is hair brushed back and one likes his hair spiked. But the similarities and difference do not end there.

Personality is a major enigma that faces people who have twins. Experts as well have been perplexed by how two people, almost identical, can be as though they are one person in some aspects yet as different as the sun and moon. This observation has been studied for years and years. There is no doubt that twins can and will act in the same fashion. Anthony and Joseph love to play the same games and play with the same toys, something they have had in common since they were able to sit. Transformers, Hot Wheels and Lego’s are the toys of chose. When shopping they will always gravitate towards these. They are so enamored by the same toys that they will work together to make sure they get the optimal amount of each collection by planning who will get what and then sharing. Anthony and Joseph also like the same types of movies and shows. There is never an argument over what to watch. Sports…same, both love to play soccer, and play on the same team. After playing for three years their coach still calls them by the wrong names. Now when it comes to differences they can be vast. At any given time Anthony can and will break out in song. He loves to sing and entertain. When they announced the school talent show, Anthony insisted that he would play the drums for the whole school. Anthony does not know how to play the drums, nor does he have a set. In his mind, and as stated, “it would be easy, you just hit the drums with the drum sticks like boom boom pow”. When asked what he would use, his reply was simple, the school has a set he can borrow. This plan came with a crying fit when told no. But in an effort to work with a child who showed an intense interest in an activity, a set of drums were bought and lessons arranged. Now Joseph, on the other hand, is not a singer nor does he like to show off. He is more hesitant in front of others and really won’t sing. But dance? Definitely yes, Joseph is the dancer and will dance alone in a private setting or in a group, but never as a sole dancer on display. When asked if he would like to perform at the talent show he had an adamant NO!

When it comes to school the boys differ quite a bit. Anthony is laid back and needs a lot of breaks when doing homework. There is a constant “I need to go to the bathroom” and “I am hungry” with Anthony. Joseph likes to work quickly and has better focus. He’s always the first one done with homework. They also differ in their strengths and weaknesses. Where Anthony excels in math and has a tougher time with reading and writing, Joseph is quite the opposite and excels in reading and writing over math. On off days they can switch it up and be better in the other subject. It really gets to be a tennis game with the boys and their schooling! And let’s talk the craziest difference of all. They both have a speech impediment. Slightly unusual, yet not completely uncommon with twins. In this respect they are the same. But to the astonishment of their teachers and speech therapist the letters that they each have issues with are the total opposite of the other, and yes, very unusual! One can pronounce F’s but not the S sound, while the other can pronounce the S sound but not the F. There are a number of letters to this effect, yet not one letter is the same for both. It has been an interesting few years for the people who work with the boys on a daily basis.

Overall it is fair to say that twins can be so much alike yet so different. And each and every day is a different day with both of them. In the end they both share the most important qualities…they both give a lot of love and they are both bursting with energy. Their love for others is abundant, their love for each other is unsurpassed. From day one they have been the same and opposite, and in ninety years, they will still be the same and opposite. A puzzle about two people created together that will probably never be answered.

Went to Cali, 4 out of 5 kids are in high activity sports, wrapping up my final paper for my last week of class, work is crazy (especially with taking time off for California), having three brunches in four weeks at OUR HOUSE, and my husband just finished up his Masters!

Your Guide to Planning the Perfect Vacation

Planning your vacation can be easy and fun with the proper steps and preparation. The first thing you need to do when planning your vacation is to pick your destination. Picking a location can be easy, if you have a spot you have always wanted to visit, at the same time, picking a location can be difficult if you are not sure where you would like to go or what you would like to do. The internet has a lot of sites you can visit to get an idea of both local and international destinations. Friends and family can also be an excellent resource for recommendations on places to see and things that might interest you. Picking your final destination might depend on whether you plan on flying, driving, or even taking a train. Your vacation budget will also affect where you can go. If your budget is on the lower side, you will need to stay local. If you have a larger budget, then your possibilities will be more vast. Once you have decided where to go, you will need to set your dates.

Picking your dates will usually depend on where you are going. If you are visiting Southern states, you may not want to go mid summer when temperatures and humidity are high. If you are planning a trip to New York, you may want to stay away in winter where they average 30 inches of snow. Planning a cruise in the Caribbean? Then you may want to set sail before June or after November when you are not in danger of Hurricane season. Some of the materials you will want to keep in your “travel folder” will be: hotel information, plane or train schedules, directions and maps, itinerary such as the places you plan to visit, and costs so you can keep track of what you are spending as well as what you plan on spending once there. Sites such as tripit.com or duffelup.com will also help you organize your trip as well.

Researching your choice of location is the fun part. Although you may have ideas on what you want to do already, researching where you are going will open the possibilities to new experiences. There may be historic sites that you are unaware of or restaurants that you do not know about. You will also be able to learn about the best modes of transportation for your given location. This will be the most time consuming part of your planning. Again, you will find a lot of information on the internet. You can find information in books, both from the library or purchased from the bookstore, and friends and family are always a great vat of knowledge. While researching your location you will also want to pay attention to any deals you come across. Add these to your folder so you remember what you saw or were interested in.

Once you find a great price on tickets, whether it be air or train, you will want to purchase them right away. Prices change constantly and if you believe the price is great then do not hesitate. You can visit sites like expedia.com and orbitz.com that will help you find the best deals. You can also use these type of sites to hunt down the best prices on hotels and Bed and Breakfast type Inns. And do not forget car rentals. If you plan on driving, you will want to research car prices and secure your rental in order to pick it up when you arrive. If you are not sure what you are looking for or do not have the time you can always use a travel agent, who will do all the work for you.

Once you have the basics done, such as your tickets and sleeping arrangements your last course of action will be to set up your extracurricular activities. Your research of your planned destination will help in these plans. You can decide what days you will want to visit certain places and build a timeline around this. Some people prefer vacations which consist of resting and relaxing while others prefer to visit as many museums and monuments as possible. Keeping the lines of communication open with the person or people you are traveling with is a must. You will want to make sure that everyone wants to do similar things or you will have to make plans to do a few separate activities.

Choco Mallow Shake

Ingredients

	2 tbPure cocoa
	1/3 cBoiling water
	3/4 cMiniature marshmallows
	3 cmilk
	2 lg scoopsvanilla icecream
	mini-marshmallows for garnish

Preparation

Combine pure cocoa, water and marshmallows in a small bowl stir until dissolved. Blend chocolate mixture with milk and ice cream until thick and frothy. Serve with the extra mini marshmallows.

Ingredients:
4 cups strawberries
1 1/2 cup crushed ice
1/4 cup powdered sugar
2 tbls lime

Blend ice and 2 cups strawberries on high til smooth. Pour into pitcher. Blend remaining strawberries, powdered sugar, and lime. Pour into pitcher and stir until blended.serve immediately. Thanks to eatbetteramerica.com for the great recipe!

42 Shoes and Counting.....

So I read an article a few days ago that stated that women, on average, have 17 pairs of shoes. This morning, in my Spring cleaning frenzie, I cleaned out my shoe closet. Yes, they are in boxes, with pictures on the outside to identify them (not everyone is in the box they came in) and yes, they are catagorized.

I counted my shoes. This was AFTER I decided to donate a few pairs.

Yes, I have come to realize I own 42 pairs of shoes and boots. And on my list of things to do today was "shoe shopping". Thank goodness my favorite designer is Kenneth Cole and NOT too pricey. And I shop smart and off season for flip flops (I will only pay more for boots or gym shoes, which I ONLY wear to the gym!). Hmmm, my husband sees my shoes but he has never seen or heard a number. And he won't (unless he reads this!). A long time ago I had friends laugh at my outrageous number of tank tops (around the hundred mark) and I come to realize I have enough bikinis to take a small country of women swimming. But every outfit needs different shoes just like my tanks are for year round layering. See, totally justified.

Oddly, I don't think I am the only one with this many shoes (and I know some of my fashionistas out there exceed this by a lot!).....Happy Shoes!

I have picked up many cute coats and jackets along the way, but I spent almost 2 years looking for the perfect one! Well, I FOUND IT! You Are What You Eat

     Whether young or old, understanding nutrition is difficult. Knowing what to eat or not to eat can be a daily challenge. So much so, that most people tend to ignore it. Do you ignore it? A balanced diet is extremely important in maintaining a healthy life, a healthy weight, and longevity of life. According to cbsnews.com, the National Institutes of Health lists that 66% of Americans are overweight (Brooking, 2011). It is probably safe to say that the majority of these people do not consume a balanced diet. According to the National Cancer Institute serious diseases are linked to, you guessed it, what you eat; killing an estimated three out of four Americans each year (n.a, 2004). Processed foods as well as fast foods have become the standard in the American diet. Both convenience and taste play a part in the lifestyle most have come to enjoy.

     Maintaining a healthy life is imperative. Without a healthy life you lose “you”, plain and simple. In one way or another, you will either shorten your life or make it unlivable. A healthy life means finding a balance between a proportioned diet, regular exercise, and things you enjoy. A Big Mac is fine, as long as it is not a daily menu option. A daily walk for 20 minutes can help work your muscles. Reducing stress can decrease your chances of illness. “An apple a day”…..including fresh fruit and vegetables can give your body the vitamins and minerals it needs to be well rounded and fine tuned. Poor nutrition equals a poor you. Poor nutrition leads to fatigue and moodiness. Eat right and you can energize and boost your mood.

      Maintaining your weight is also extremely important. Having excessive weight can cause degenerative joint disease, can cause increased risk of heart attack, increases your chance of diabetes, causes high blood pressure; to name a few. One way to help control your weight is through a balanced diet. Eating the proper balance of fruit and vegetables, grains, dairy, proteins, and “healthy fats” is a great way to give your body the fuel it needs to work. The USDA recommends that you eat a certain percentage from all these groups (n.a, Dietary Guidelines for Americans, 2011). Whereas once upon a time the “food pyramid” was standard and the same for everyone, it is now individualized. Going to www.USDA.gov, you can use their interactive tools to get a personalized eating plan. There are a plethora of sites that can offer help finding a well rounded diet that works for you and your lifestyle.

     What, you want to live until you are 100? Well then EAT A BALANCED DIET! Eating well can increase your chance of a long, happy life and decrease your chance of a sick, unhappy life. Everyone wants to live as long as they can. To get married, have a family, raise the kids, see them get married, have grandkids, see the grandkids get married. You get the point. And what about retirement? You work so hard and you know there is a light at the end…it’s called retirement. It is a time when you can hone your hobbies, travel, read, and enjoy the warm summer days without being trapped in an office or car for work. How will you enjoy that time in your life? Will you have made good decisions with your daily menu? People who reduce sodium intake live 7 years longer than people with a high sodium intake. Will your body be thanking you in years to come for having fruit instead of donuts, a glass of water instead of Pepsi? Make good choices now and your body will thank you now and later with strength and vitality.

     The message is simple. Eat what you know you need to eat, enjoy treats now and then, and listen to your body. If you are not a healthy eater you can learn to make small changes. Eating 5-9 servings of fruit a day is a basic change that can decrease your risk of disease. Drinking 8 glasses of water a day will help your organs absorb more nutrients. Put down the salt shaker to reduce your risk of high blood pressure. Hold the mayo to reduce your fat and calories. All these reap benefits. Most importantly, get to know YOUR body and what it needs. Guidelines are just that, guides. No two people are alike and no two lifestyles are the same. If you run daily you need more protein, if you are a busy mom you need a mix of complex and simple carbohydrates, which boost energy. Finding a happy balance will give you a healthy long life.

Boston Cream Cupcakes......

I am so excited to be making these today, yummy Boston Cream Cupcakes from food.com. But, in order to work on my cupcake skills I bought a pre made custard filling from a cooking store.

I will post pictures later of my cupcakes, but for now here is the recipe I will follow:

Ingredients:

CUSTARD

1 cup whole milk, divided

2 tablespoons cornstarch

3 large egg yolks

1/3 cup granulated sugar

1 tablespoon butter

1 teaspoon vanilla extract

1/8 teaspoon salt

CUPCAKES

2 1/2 cups flour

2 1/2 teaspoons baking powder

1/2 teaspoon salt

1 1/4 cups granulated sugar

1 vanilla bean

10 tablespoons butter, softened

6 large egg yolks, at room temperature

3/4 cup whole milk, plus

2 tablespoons whole milk

GANACHE

2/3 cup heavy cream

8 ounces semisweet chocolate, finely chopped

Directions:

1 MAKE THE CUSTARD: In a small bowl, whisk 1/4 cup milk with the cornstarch until smooth.

2 Add the egg yolks and whisk until blended.

3 Combine the remaining milk and sugar in a small, heavy saucepan and bring to a boil over medium heat, stirring occasionally.

4 Remove pan from heat and whisk 1/2 the milk mixture into the yolk mixture.

5 Return yolk mixture back to the pan and bring to a boil again; boil gently for 1 minute, whisking constantly.

6 Remove pan from heat and whisk in the butter, vanilla, and salt; transfer filling to a covered container and refrigerate for several hours, until thickened and completely cool.

7 (It's probably easier to make this one day ahead.) MAKE THE CUPCAKES: Preheat oven to 350*F.

8 Line 12 jumbo muffin cups with paper liners.

9 Whisk together the flour, baking powder, and salt; set aside.

10 Place the sugar in a small bowl; split the vanilla bean lengthwise and scrape out the seeds with a small paring knife into the sugar.

11 Mix with a fork to distribute the seeds evenly throughout the sugar; set aside.

12 Using an electric mixer on medium-high speed, cream together the butter and sugar mixture for 5 minutes, until light and fluffy.

13 Add the egg yolks 2 at a time, beating well after each addition, and scraping bowl occasionally.

14 Reduce mixer speed to low and add the flour mixture in 3 additions, alternating with the milk in 2 additions; blend until smooth.

15 Reserve a scant 2 cups batter; spoon remaining batter into the prepared muffin tins.

16 Center about 2 Tbsp.

17 custard filling over the batter in each cup; completely cover with reserved batter.

18 Bake cupcakes for 22-24 minutes, in 2 batches, or until the tops are golden brown and set.

19 Cool for 10 minutes in the tins on wire racks; carefully remove cakes and cool completely.

20 MAKE THE GANACHE: Bring the heavy cream to a boil in a small, heavy saucepan over medium heat.

21 Remove pan from heat and add the chocolate, swirling the pan so that the cream covers the chocolate.

22 Let stand for 3 minutes, to melt the chocolate; whisk gently until smooth, making sure to incorporate as little air as possible into the mixture.

23 Set aside to cool to room temperature.

24 Spread an even layer of ganache (about 2 Tbsp.) over each cupcake; refrigerate for 40 minutes to set the frosting.

25 Serve at room temperature.

So since I have to write for class, and being the attention whore I am, I have decided that every paper I have to write for class I will post here. Um, with the exception of my obituary, since I do not want you all to know what a great life I end up having (you will have to just enjoy the ride with me day after day!).

So, paper number one:

A Day at the Beach

I can hear the water, as it crashes to the shore. It sloshes, slurps, slowly gets quiet, only to roar again. It is a warm summer day and I can feel the tepid water as it touches my toes. It is soft and gentle like a pair of cozy slippers. The air is fresh and clean. The warmth of the breeze takes my mind off of the real world and puts me into a trance. I am only in this moment. I can smell and taste the salty air. It rushes through my nose as though each breath is my first. I slowly breathe in and out, enjoying each deep inhale and exhale. The sun is hot on my skin. I can feel it. I welcome it. I am soaking it up. Much like a warm hug on a cold night, it embraces me. I want to live in this here and now forever.

And then it’s over. Like a New York minute. I hear it, the notorious “mom…mom, look”. Life at the beach: with kids. Although my moment is gone, it will return. One of my favorite places in the world is the beach. More importantly, it is the beach by the ocean. It is not any particular beach, any ocean will do. As long as there is sun, sand, water, and a warm breeze; it is my favorite place. Every family vacation includes the beach. Whether for a day or a few days, the beach is always a planned attraction.

It is not just the beach itself. It is also the affect it has. I can hear the giggles, the squeals, the belly laughs. Looking over I see my children building a sand fort. The sand is silky smooth like the back of a cat. It is warm and light. Slowly they add water and it becomes stiff, clay like. They build, they laugh, they are enjoying the beach and all it has to offer. They are artists. They are adventurers. They are athletes.

The water is another entity in its own right. I must have been a sea creature in a former life because I adore the water. Anything tropical or relating to the ocean has me enamored. Feeling the water makes me happy. Actually, it makes me blissful. The gentle lapping of the water as I slowly descend into the clear blue glass, sparkling as each and every individual ray of the sun hits it. It glimmers like a diamond that has just been cleaned. It invites you in like an Italian grandmother who just cooked dinner. You have no choice, you must enter the lair. There is a whole world unbeknownst to humans that lies within the water. When you truly think about it, as fun as it is to play in the water, to swim, splash, float…there is life happening all around you. Life that I am oblivious to. Life that is oblivious to me and my existence.

After a few hours I find myself sitting back on a toasty blanket of sand. A puff of salty air hits me. I am back, back in a new moment. It feels similar to a past state, yet it is completely different. Every sense is now experiencing something new. How long will this moment last? I am not sure, I am never sure, but I will enjoy every second as though it is the only second I will ever have.

1.Heat oven to 350°F (325°F for dark or nonstick pan). Line13x9-inch pan with foil, letting foil hang 2 inches over ends of pan. Spray foil with cooking spray. Make brownie mix as directed on box for cakelike brownies. Spread batter in pan. Bake 26 to 30 minutes or until toothpick inserted 2 inches from side of pan comes out almost clean. Cool completely, about 1 hour.

2.Meanwhile, in medium bowl, beat 1/2 cup whipping cream with electric mixer on high speed until soft peaks form; set aside. In medium bowl, beat remaining Peppermint Cream ingredients on low speed until blended; beat on medium speed until smooth. Gently stir whipped cream into cream cheese mixture.

3.In 1-quart saucepan, heat 1/4 cup whipping cream over low heat until hot but not boiling; remove from heat. Stir in 1/2 cup chocolate chips until melted. Let stand at room temperature about 1 hour or until slightly thickened.

4.Remove brownies from pan, using foil to lift. Cut brownies crosswise to make 3 equal rectangles. Trim sides if desired.

5.To assemble torte, place 1 brownie rectangle on serving platter; spread with 2/3 cup Peppermint Cream. Top with second brownie rectangle; spread with Dark Chocolate Ganache. Top with third brownie rectangle; spread with remaining cream. Refrigerate uncovered until serving.

6.Meanwhile, place a piece of cooking parchment or waxed paper on cookie sheet. Draw 1 1/2- to 2-inch tree outlines or trace around 2-inch tree-shaped cookie cutter, leaving 1/2 inch space between each tree. Center toothpick at bottom of and 1/2 inch into each tree outline. In 1-quart saucepan, heat 1 cup chocolate chips and the shortening over low heat, stirring constantly, until chips are melted. Pour chocolate into decorating bag fitted with plain tip or resealable plastic bag; snip one corner. Starting at top of each tree outline, pipe chocolate over tree and end of toothpick within tree; fill center with random, squiggly lines. Refrigerate until chocolate hardens. Gently remove trees from paper; refrigerate until serving.

7.Just before serving, sprinkle torte with candies and arrange Chocolate Trees on top. Store covered in refrigerator.

Yes, Santa is coming to our house on Tuesday to see if we have been Naughty or Nice and ask us what we want and I am super excited. Not sure if I am more excited to see the kids reaction to Old St Nick or more excited about what I have planned for the menu. Love cold weather foods....and what is better than desserts and cookies for entertaining during the Holidays!

Polar Express is ready to go, Holiday music is set.

Chocolate Marsh – created by Cheri Loughlin

1/2 ounce Torani White Chocolate Syrup
1 unit International Delight Hazelnut Coffee Creamer
4 ounces Hot Coffee
Marshmallow Topping
Whipped Cream
Nutmeg

Swirl marshmallow topping in heatproof coffee container. Add white chocolate syrup, coffee creamer and hot coffee. Top with whipped cream. Sprinkle with nutmeg. Notation: Bring this non-alcoholic coffee to the next level by substituting Frangelico Liqueur and Godiva White Chocolate Liqueur for the syrup and coffee creamers.

A hot, steamy straight pour is usually my preferred choice for the first rounds of java, but every once in a while a delicious dessert style cup of coffee stirs my interest. The Razz is a warm, creamy dessert style coffee for any time of year, but especially lovely during winter months. Since The Razz coffee recipe contains no alcohol it may be enjoyed day or evening.

Double Layered Chocolate Pie

Just made this pie tonight and it is fabulous. And it was as easy as, well, pie!

Double Layered Chocolate Pie

Chocolate flavored crumb crust filled with cream cheese and chocolate layers. Chilled and served.
Ingredients -
4 ounces Cream Cheese, softened
1 tablespoon Milk or Half-and-Half
1 tablespoon Sugar
1 (12 ounces) tub Cool Whip, thawed
1 6 ounce Chocolate Flavor Crumb Crust, prepared
1 1/2 cups cold Milk or Half-and-Half
2 packages Chocolate Instant Pudding and Pie Filling

Preparation:
1. In large bowl, combine softened cream cheese, 1-tablespoon milk, and sugar. Mix with wire whisk until smooth.
2. Gently stir in 1-1/2 cups Cool Whip.
3. Spread mixture on bottom of chocolate crumb pie crust.
4. Add 1-1/2 cups milk to medium bowl. Add instant pudding mixes to milk.
5. Beat pudding mixes and milk with wire whisk.
6. Stir in 2 cups Cool Whip.
7. Spread mixture of bottom layer.
8. Refrigerate 4 hours until set.
9. Garnish with remaining Cool Whip.
10. Store leftover pie in refrigerator.

Fruity Strawberry Shake

Ingredients
2 cups Neapolitan ice cream

1 small firm banana, cut into chunks

1/2 cup milk
1 tablespoon strawberry preserves

1 tablespoon pineapple ice cream topping

Directions

In a blender, combine the ice cream, banana and milk; cover and process until smooth. Add the preserves and ice cream topping; cover and process until well combined. Pour into chilled glasses; serve immediately. Yield: 2 servings.

Super Simple = Super Delicious!

Ugh, Home Sick!

Yup, I am home sick today. And feeling horribly guilty! Why is it that mom's feel guilty when they take time for themselves? Even when desperately needed or without choice? My husband told me to stay home yesterday. I refused. I feel worse today. And the only thing that made me stay home? We are going to dinner and to do a wine tasting with friends on Saturday night and I want to make sure I don't get worse and miss it. So, here I sit, in my pajamas, waiting for 2:15 when I go to the doc and prove my husband WRONG, yes prove that I do not have strep! I have lost my voice though. It's killing me. Having 5 kids that includes 6 yo twins when you can't talk louder is HARD! LOL

Well, I suppose I can sleep and blog today. Ugh, while thinking aboout ALL the work that is sitting on my desk! Why can't I be a guilt free girl?

Earl Grey Hot Chocolate

This is a fabulous drink I found on "Our Kitchen" Blog

For anyone who loves Hot Chocolate and Tea YOU MUST TRY THIS!

Ingredients (serves 2)

1 ½ cups milk

1 ½ tsp earl grey tea

6 square of dark chocolate, or to taste

Method

1. Combine the milk and tea in a saucepan and gently heat without boiling. Continue heating for approximately 10 minutes. The milk will take on a light tea colour.

2. Place 3 (or more if desired) squares of chocolate into a heatproof glass. Pour the milk over the chocolate using a tea strainer/colander to strain off the leaves. Serve.

I added a smidgen of whipped topping and some shaved dark chocolate. I think this is my new favorite Fall drink!
